Why are pencil options reset in adobe illustrator?

I take the "pencil" tool, set the stroke, for example - 20, select the width profile (purely for example: thickness in the middle, tapered ends), draw a line - everything is reset: the width profile and a stroke of 1px. I look at the video and there they draw with a pencil with the same constant parameters. And I have reset.
It is clear that you can draw simple lines, then select everything and set the parameters, but I would like to figure out why there is no such problem on the video. Because I would like to immediately see what happens with this width profile

Go to the menu Window - Appearance,
open the appearance options (three horizontal stripes in the upper right corner of the window)
Uncheck "New object with basic appearance".
That's how I figured this out for myself.
