Why are HDD 3.5" not used in servers?

How many servers I watched, everywhere 2.5 "disks. They are more expensive and smaller in capacity. Is it really impossible to find a place for a large hard drive.

There is such a thing as "density". It characterizes how much equipment you can place in a given volume. The price for the server is already secondary - an extra couple of tens of thousands will not solve anything at all :) (and even a couple of hundred may not solve it). On the other hand, 2.5" drives can be stuffed sideways into the case and at least twice as many will fit in.

Yes and 3.5
Why not in general ?
There is already an option for either 2.5 or 3.5 And it depends on the tasks.
It's just that it's more profitable to take 2.5 in terms of density, taking into account raid, etc., etc.

1) 3.5" disks are quite used, apparently you looked bad
2) In the 2.5" form factor, servers can accommodate 2-3 times more disks
