Just look for mibs on your devices and make templates for them in your monitoring system. We used zabbix. On eltex mibs can be downloaded from the site, on this site you need to search on the forums or in the naga telegram, for example.

Working in a certain provider organization with the letter M, I made monitoring of the gpon network in the form of a map. The marker is a separate port on the olt. If the marker is grey, there are no active onts on the port. It is also possible to apply a distribution network diagram. Everything is done in php, js + ajax.
Data is taken from olt via snmp every 5 minutes, there is a history of the number of ont on each port per day.
