Do they rewrite existing information from textbooks by different authors or write programs based on their data, their authors? That is, what is the uniqueness of the information they teach?

There is no uniqueness. All information about programming languages ​​is usually stupidly and free of charge available in the help and many materials. It is impossible to copy information from other textbooks for commercial purposes, because this is a violation of copyright, but if a person owns the subject, then of course using other textbooks when preparing your course is not a problem.
A person is taken, a topic is given to him, a person writes a course, prepares materials. Perhaps there are several. Experts review the materials and evaluate whether they are sufficient, pay the person. Both a person and experts can carefully prepare a course and not very much. Carefully check and not very much. To be able to explain complex things simply and not very well, so coursera and stepic are not a guarantee of quality, but there are certainly good courses there, because quality comes with experience.
And the uniqueness is basically the already proven mechanism of online learning, with a well-established payment scheme for both the courses themselves and the trainers who prepare these courses. PR increases the rating of the site in the eyes of the student, due to which you can raise prices and attract more people. Having money allows you to attract more savvy trainers to create and teach courses, which improves the quality of the courses.
