At the moment, the stable branch is 8.
7.x is already oldstable.
By the way, testing may also be suitable for your purposes.

By no means testing, version 9.0 strech is still damp. Many had problems with versions 8.3 - 8.5, the best option is 7.8

The last one is currently stable - 8.7.1, for the purposes described, it is completely suitable.
Using testing in production is, IMHO, a bad practice, and in general, from experience, before the release of the X.3 stable version, it also sometimes requires long trials.
You can use both 8.6 and any other from 8.x to install, the main thing is to configure the repositories after installation, and do apt-get update && apt-get dist-upgrade.
