Which script to selectively backup site files to a remote server?

I want to set up a selective backup of site files and directories on VDS with sending to a remote server via ftp
. The functionality of ISPmanager is completely satisfied, but the problem is that Plesk is installed on the server, and it is only possible to backup the entire site (if not right, tell me how to do it)
Backup you need just separate files and directories, because there are a lot of pictures on the site. And you need to always have executable files at hand. There are not many files, so both bash scripts and php will do.
I read about rsync, but if I understand correctly, it does not quite fit, because it copies all the data at once.

@yakupovak

you can write in bash a beard for rsync and it will merge only what you want.
you can use lsyncd - copies only what has changed.
