It's not only about the cores, but also about the cache and multithreading and turbo boost and various other features of the processor.
In your case, core i5 definitely wins
For video processing, and work with computer graphics, the i5 will be better than the i3.

And the integrated graphics of the new Kaby Lake i7 will even allow you to do without a video card.
Photoshop, 3ds max, maya, After Effects, Sony Vegas work great on integrated graphics.
index i3 and i5 may not be enough for comparison! look at the whole code of the processor, it determines the most important parameters like cache size, frequency and multiplier (i.e. base frequency, it is more important). And yet, compared to desktop processors, mobile processors can quickly enter throttling (slow down the frequency), i.e. according to the parameters they can be fast, but according to the tests they are not.
Experience shows that at the moment the average consumer loads 2-3 cores, the remaining cores will be loaded either with specialized tasks (calculations) or atypical use, simultaneous launch of several tasks, even compilation / assembly can rarely be parallelized.
Therefore, do not chase the number of cores, chase the size of the processor cache (the most important) and maybe the frequency. You will almost certainly need 4 cores.
