I would advise a good percentage (the more cores the better and turn on hyperthreading if intel) and a simple quadro. (you can also look at it because the chance that she was killed is small, unlike the game ones)
Then you will not fall into restrictions, for example, you can’t run blander via RDP, because Nvidia blocks the use of opengl via RDP, who knows what else might not work on game videos.
And if you don’t render at all, but only work with photos, the built-in video is enough.
Ryzen7 2700X will be more powerful due to more cores/threads, but a lot depends on the software in which you work and you should probably pay attention to quadro(pny,dell)/radeon pro(amd,dell) video cards.
