Which Mikrotik to choose for star network topology?
We want to use the "star" network topology entirely based on Mikrotik - there is a central office and there are 10 branches . Each branch has at least 200 users. In the regions we use Mikrotik models of the CRS125-24G type. We want to make a tunnel between the regional Mikrotiks and the central Mikrotik (the main central office).
What model of the central main Mikrotik is suitable for such loads? At least 20 tunnels will be installed between it and the regions (approximately 2 from each region). The budget is unlimited, but reasonable prices are desirable.

Or what Wexter wrote, or personally I would go for the server and the x86 license
Addition / clarification to the Wexter post - on such a number of branches / users, if you still install Mikrotik, I would probably prefer the last two models (they at least have support for hardware encryption), and for the central branch I set would have 2 of them and knit with each other for VRRP!
The central router "falls out" - the whole "star" falls apart ...
The option with a server and an x86 license (in terms of performance) is also not without interest!
