I work in Linux Mint (Mate) with two monitors. No problem.
I used to work in Ubuntu, everything worked fine too.
In general, there will be no problems with NVidia, choose any to your taste.

Probably it's not about Linux, but about X, I'm sitting at work on fedora 19 with the 3rd dwarf on 2 monitors, no glitches, everything works perfectly. The video is really not Nvidia, but Radeon.

Everything has already been said about distributions, but this way:
I advise you to pay attention to tile window managers (Awesome, xmonad, etc ..). Very comfortable and functional items.

Yes, any + tile window manager (this is a miracle when you work on multiple monitors). habrahabr.ru/post/150100 interesting picture www.haskell.org/wikiupload/a/aa/Screen-triplehead-...

In the case of AMD cards - almost any with an update to the 3.13 kernel, in which, finally, they managed to make normal support for two monitors. In the case of Nvidia - just Kernel Mode Streaming and no problems. I advise from personal experience. As for development, I tried a lot and stayed on Ubuntu.
