Installation images differ in what DE will be delivered during installation. The repositories are common and do not differ from each other in any way. From one of the images you will install Cinnamon from the disk, from the other you will install Mate. At the same time, you can then deliver both the second and normal DE from the Ubuntu repositories, do not forget that Mint is just a few packages of your DEs, and everything else is there from a normal distribution, it’s just that Popov’s syndrome haunted the authors and I wanted to call the assembly of two DEs a distribution .

Install Linux Mint 17.1 MATE (with codec support) - Beautiful environment, everything is stable, fresh and without glitches.
There is also LMDE 2 (Based on Dedian) - Pretty raw version (in a couple of years I think it will be better), the programs are old and buggy, I installed it myself and demolished it because of glitches.
Now on a Linux Mint 17.1 MATE laptop (with codec support) - everything works fine out of the box.

As a desktop , something from ubunta, as the most customized for the user.
When you play enough with the desktop, you can also install the server , there is your own software.
For servers, Gentoo or Freebsd is best. But this is subjective. Both are good, but on loads Gentoo wins
