Which hypervisor to choose for Windows Server?

I'm currently reading Microsoft's WS2008 training courses "Designing a Windows Server 2008 Network Infrastructure" and "Administering Windows Server 2008".
I want to practice (in addition to the test environment at home) to consolidate what I have read, namely, to raise a domain on Windows Sever at work, add and configure the roles of AD, DNS, WSUS. But I want to implement it all on a virtual machine.
There are SBs with the following specifications:
- Dual-core Intel® Core™ i5-650 Processor (4M Cache, 3.20 GHz)
- 8GB DDR3-1333
- 2x Barracuda 7200.12 320GB hard drives
1. Will this configuration handle such a task?
2. Which free hypervisor would you recommend?

For the 4th year I have been using KVM (nettop on i5) on which WS2003 is running.
Everything is fine, but when there are more than 5 users in the 1C terminal, slowdowns occur, but I think this is a 1C problem

Above, you were correctly written about Hyper-V server 2012 r2. Don't listen to resources - in a production environment there are several virtualization hosts with WS2012R2 Datacenter Edition With a GUI , so even with a GUI, the hypervisor does not take up more than 1.2 GB of RAM. Hyper-V Server took about 700 MB. Starts without any kicks at all. Guest systems can be organized on Server Core (no gui option), they will occupy 300-1500 MB of RAM.
There is a server in the near-combat environment: AD, DNS, WSUS, Print Services, File Server. Works with minor complaints on Core i3/ 4GB/ 4x2TB RAID10. Before entering the product, we will deliver at least 8 GB of RAM and do something with the disks (4x2TB RAID10 is a very bad idea for disks for virtualization)

Either VirtualBox or Xen (opensuse has a mouse interface for it). The main thing - do not put Windows on the host, it will devour all the resources.
Two hard drives are not enough. For fault tolerance and speed, you need RAID10 or RAID5 (or better - RAID6) - this is at least 4 disks.

hypervisor choose the one with which you will not have any issues with the service, BP is dns and you can dhcp on one virtual machine, and raise the vus on another

1.I advise esxi - free virtualization with everything you need. I work with 2 hypervisors on which everything is spinning: from ad dc gc to test ones. it has a very good backup feature (ghettovcb), supports on-the-fly hardware up/down and is easy to maintain via vsphere.
2. Official support for 2008R2 ends on January 15, so it's better to take 2012R2 with a margin.

here depending on what you know on linux or Windows.

Almost everywhere, except for Proxmox - this is Backup of virtual machines.
Xen is a Linux system, so you will have to backup, etc. to dig into the line of Linux

VitualBox is not a professional system at all. virtualization, and so (crap to test) - and eats a lot, and puts everyone in Windows.

Hyper-V 2012R2 CONSOLE - absolutely free. Without shell. Working with command lines.
