Which hardware to choose for a simple hypervisor?

Hello. I'm going to say right off the bat, noob question .
I have never worked with a hypervisor, and now I wanted to.
The question is, what is better suited for the following task:
- Free version of ESXI
-CentOS for ZABBIX + Mysql for it (I will monitor about 15 machines + 30 devices)
-CensOS Asterisx + Elastix (Total 8 ip phones locally)
-Win 7 To run small network programs in Python
In the future, perhaps some other weak machine on win7
For such a task, something cheap like
an old server with 2 * Xeon E5345 8g of memory or better
some kind of I5-4460 + 8g of memory is suitable
or is it generally a stupid idea and it won’t work will?
In theory, the server should be able to handle it, 2 cores per machine + 2 gigabytes per server (you can use 3 gigabytes under Win)
, this should be enough for each machine, I now have Asterisk on much better hardware without any problems.

It will work even on very weak hardware.
The only problem is the capriciousness of ESX in relation to network cards and disk controllers .
You can see about hardware by googling "whitebox ESXi"
