Which disks to choose for the VM host?
About 20 virtual machines are planned. How to choose the right platform for the server (according to HDD slots)? Few, but large HDDs in raid 10 (for example, 4 HDDs of 6TB) or many small ones (10 of 500GB), roughly speaking, one physical disk for 2 virtual machines?

Many, but big ones :) If this is the only server, it's better to take a platform with a reserve of empty slots - in case they are full. Requirements are growing along with the office :) and what was the norm yesterday is no longer the case today. And buying another platform will put the boss in front of the question "Which eccentric planned this server?" :D
If you don’t need a lot of spindles, then personally take large disks
It depends on the tasks.
If there is something like Yu-Tubchik - then HDD.
If the loaded database - that SSD.
The same can be said about virtual machines - if they don't want to load the disk, then it's better to allocate separate disks.
If the load is mainly on the processor, large shared disks are more convenient.
It all depends on the tasks and the load profile.
