I recommend starting from two input aspects:
1. Personal "attachment" (ownership) to the technology. If your level of expertise in php and node.js is relatively equal, then look at the external signs of the interface environment and the connectivity of certain modules to the candidate CMS.
2. In the visible future, do you intend to engage in "man-made intervention" in the core of the CMS, in order to change and / or expand the functionality? Therefore, if YES, then rely on your knowledge in a particular language.

Technically, if you write from scratch, then it doesn't matter what language you write the store in. But few people do this, especially in niche segments.
If you understand PHP better, then take PHP and vice versa.
Based on my experience, I would consider PHP, since the number of ready-made modules, templates is higher than in nodejs, and it will be easier to find a specialist (I have launched more than 30 online stores in my career).

Yes, even in python, if any. The language is not important. Choose by functionality, don't look at the language

You must first answer the question, what problem are you solving? Write an online store (technical) or run an online business?
Do you know a lot of successful or at least well-known e-commerce platforms on a node? Me not.
For a highly customizable PHP platform, take a look at Shopaholic . But keep in mind, due to the youth, there are not so many ready-made solutions yet (as of July 2020), for an excellent Developer Experience.
If you look at something like WooCommerce or OpenCart, you will get a bunch of ready-made solutions along with a bunch of customization gems.
So first determine the business requirements for your project. =) Good luck!
