Which certificate to choose (2 domains, mail and services)?

The company is small. There was a need for a certificate for Exchange, at the same time we decided to fasten it for our services (several subdomains) and the second domain (a separate site). I have never encountered them before - Wildcard, UUC, EV, etc - new words / abbreviations for me. What is the difference? Which is better for my case? Preferably cheaper.

For eksch - only SAN, because it must have such domains as owa and autodiscover - otherwise it won't work. If you meet five domains - usually in a SAN certificate five are included in the price - well, if not, you will either have to take separate certificates (here you can take it on LE), or pay extra. Whether gives LE SAN certificates - I do not know.
EV-certificate is useless for you - it's mostly show-offs, you will need OV - SAN-certificates are not DV.
