Which backup mode is better to choose?
The enterprise uses NTBackup to make weekly backups of the file exchanger. The amount of information is about 1 TB. Mostly important documents, photographs, etc.
With such a volume, what type of backups is preferable to choose? Incremental or just make a full copy each time?

It is better to make a copy via rsync (DeltaCopy for Windows).
On the server with backups, make snapshots / shadow copies at the required interval. Or snapshots on the main one - see if necessary.
On your server with Samba for backups, you can use any file system that supports snapshots. I use ZFS - I like how the system of snapshots, on-the-fly compression and deduplication is implemented there - it saves space quite effectively for backups.
I use the following option, for example:
- on the main server, snapshots for every hour with a storage period of a month (from any occasion)
- rsync backups at night on weekends
