Neither postfix, nor sendmail, nor airedmail works, I don’t understand what’s wrong. I'm setting it up for the first time. You just need to add all incoming letters to *@server somewhere. What is the minimum to register in the config?

The default Debian MTA is exim.
Set up an MDA (for example, procmail).
sendmail has been around for a hundred years as just a link to the real MTA used in the distribution (postfix/exim...).
