What to transfer VPS to - centos 8 or?

I’m not asking a question for the sake of a holivar - the current ubunta 16.04 completely got it, that neither the update of the packages is a surprise, with a whine it still hasn’t solved the issue .. in short, it’s enough ..
I read about centos 8 before asking you here - on the one hand, they seem to be scolded like amno mammoth (in terms of frequency of updates and software), on the other hand, they are praised for their stability.
I need stability, I'm tired of the endless surprises of ubunta.
What distro would you recommend in order to transfer the current set of sites (nginx, mysql, php-fpm, postfix) to the new OS with minimal

configs of services will lie in another place, no more. However, stupidly copying config files will not work. For example, the organization of php module configs differs in debian-based (ubuntu) and redhat-based (sentos).
Actually, as you already know, I’ll just confirm once again - you have two options (in accordance with your question): debian 10 or centos 8.
From my own experience I’ll say that both are very stable, the second one has yes - the packages lag far behind in novelty and sometimes you have to connect repositories, but this does not interfere if your web applications do not require fresh software.
In general, given that you have experience with ubuntu, debian will be easier to master than centos.

Centos is the best OS for serving web projects.
- If you manually install and configure software (web servers, databases, php), then install Centos 8.
- If you have a control panel, look at the software recommended by the developer.
- And if you have not used the ISPmanager5 control panel before, we recommend ordering a Centos 7 virtual server with the ISPmanager5 panel installed from the hosting company. Some hosting companies can also help you transfer the project to your server and customize the panel for your site(s).
