It will be optimal to look at vacancies at the place of residence and choose the language / framework with which you will most easily get settled. On the other hand, you should like the language, because you will work with it. If you don't try it, you won't know what you like. On the other hand, language is just a tool. Need to write in Java today, write in it. You need to write in Python, go to it. But it is still better to study one, but well, than several, but so-so.

There is no difference on what to write the backend, but for writing the logic of the devices themselves, Java has more opportunities, as far as I know.

For IoT, C is better :)
Although it depends on what you mean by IoT - if these are rpi-level hardware and more powerful, then I would choose C #
