What to choose when installing Ubuntu Server in the Disk Partitions section?
Hello, I'm installing Ubuntu Server 16.04 on a pristine server, in the disk partitioning section I have only 3 options,
1) Configure iSCSI volumes
2) Undo partition changes
3) Finish partitioning and write changes to disk

The operating system does not seem to see your disks - the drivers are not suitable.
What kind of non-standard iron do you have there?

And how you will mark up and how you will do lvm is your choice;)
Check your BIOS settings for SATA. There should be something like in ahci or IDE mode. Play around with the settings.
