What software do you use to create documentation?

Ideally, I would like to find a program in which you can create network diagrams, the location of servers in racks, so that you can fill in the building plan and mark workplaces and sockets on it, create equipment lists, etc.

Visio.
Unfortunately, well, they haven’t come up with anything yet, even at the feet of Visio crawling in OSS. LO Draw is suitable for the very simplest work, but no more.
For text documentation - redmine

Of the free ones, dia or LibreOffice Draw work well.

server rack arrangement

Try RackTables for yourself. Perfectly displays how many units are occupied by what, domain name, IP and all related fields.
