What server OS is better to use for Bitrix? What can you recommend me?
I currently have Ubuntu, but some people say it's best to install CentOS.

Any will do. CentOS is convenient only because it has a script that installs BitrixEnv, which is very convenient. The script has procedures for setting up sockets, issuing a letsencrypt certificate, and the like.
If you yourself are able to administer the server and know what is needed and why, Ubuntu will do.
I use both.

I personally prefer Debian, they have more conservative repositories

Centos is the best option.
