It is possible to obtain this data from suppliers. Since there are many positions, there is even more data. It is necessary to store this data somewhere and process it somehow.
While thinking about buying an old server, put it in the office, so that when accessing the product card, this server processes the necessary data and gives it back.
Unfortunately, I don't understand server hardware at all.

Sometimes a regular PC is installed and used as a server, the reliability is lower than that of professional hardware and the speed, but everything works fine. It also depends on the channel, if the traffic of a large office channel may not be enough. Better rent a server, any where there is enough disk, google VPS, VDS for 500-1500 per month will be normal for a start

I would advise you not to invest in a full-fledged server.
First, it is not economically viable.
You will need to pay for electricity, for Internet channels (reservation) for a piece of iron. All of this comes at a good price.
Get yourself a VPS with average characteristics and payment of 1000 rubles per month.
Hosting will take responsibility for fault tolerance and channel redundancy.
12 thousand per year, cheaper than 50-100 thousand per server + internet fee + electricity.
As long as you have all this at the development and promotion stage, you will not get a lot of traffic. Therefore, in the first six months - a year, VPS will save you.
When you realize that your site has started to gain momentum and your server is not coping, you will have 2 solutions.
1. Put VPS more expensive.
2. Buy your own server.
In terms of software, I would advise you to choose a more serious solution for such database volumes. For example, pay attention to PostgreSQL, if you have specified a 50GB database volume.
If the database is small, then install MySQL, everything can always be migrated to more serious solutions.

Secondly, VPS? what other VPS, when you need at least 8-16 gigs of RAM just to raise the indexes from your positions into memory, otherwise you will just beat IO, which the VPS does not have, these are fairy tales.
