What OS is better to put on the server?
There is a future server on Intel Core i3, DDR3 6gb, hdd-1 72gb (10 000rmp), hdd2 320gb (7200rmp). The server is needed as (apache + mysql + php) + mail server + dns server (for multi-domain), I've been sitting for an hour already thinking Windows Server 2008 R2 or Debian or Ubuntu.

Well, I'll say this. There is much more documentation on LAMP for Debian and Ubuntu than for Windows. Almost all documentation from Debian applies to Ubuntu and vice versa (but not all). Debian has a slightly more academic community. The packages both there and there are approximately the same if we are talking about Ubuntu LTS. But in general, packages are updated less often in Debian.
Install Debian with peace of mind and it will be a great choice!
I would say that what you understand better, then put it. It would be nice if there was a person on the tack who could quickly suggest something if something happens. In your case, with equal knowledge of OS, I would look at debian without gui
