We are not talking about complex banking systems and so on. I'm talking about online stores, blogs, and so on. etc. Now I'm considering ruby ​​and, accordingly, ruby ​​on rails, and JavaScript with node.js.
Which language do you think is more promising? What will be easier to master at the initial stage?)

php is lightweight, in demand, and relevant to your needs.
interactive applications of a different plan are usually written on js + on most hostings (and they are used for online stores and blogs) node.js is not supported

PHP is quite enough for online stores and bloggers, I don’t know why you don’t consider it.
And if we consider the options you suggested, I would certainly choose Ruby on Rails. It will be much easier to master it, because there are a lot of materials on the net.

The right question is not which language to choose, but which technology stack to choose, which framework for the server and for the client, and which DBMS.
