What does a good and in-demand SEO specialist need to know?

SEOs are a whole different story. For the most part, they are stupid (at least in our office), they don’t know anything, they work with a couple of programs to track site statistics and check content for uniqueness, they get bored with stupid questions, etc. Throw them in the neck)
