What kind of non-disclosure agreement is needed?

Good afternoon!
I will formulate a question: there is a development department, they accordingly develop some kind of unique product. Suppose a person was lured to another job. How to protect all written code so that it cannot legally go beyond the company?

In fact, no way.
But what can be done:
1. Tasks for the developer must be specific
2. The development process is recorded
3. The code is fixed in one way or another, but, alas, you can’t do without paper - because in the Court only it will be really interesting
4. Work on bureaucratic part - the employee must work for you officially, be listed more or less correctly (but this is not so important), and (here it is important!) It should be directly written in his job description that he is directly related to the code, that this is his direct duty.
Your task is to prove that this person did what he was supposed to do for his salary. That the code is not his work, but the result of paid work.
But I won’t tell you how to find out that this code was used. How to prove to someone that this slightly modified code is plagiarism too. The judge will not understand what's what if the same approaches are used, but, for example, the names of the classes are different. Expertise? Yes, perhaps ... But it's a horror how much time and money (which you can try to return if you win the process)
