The MX record specifies the mail server address for your domain. If I were you, I would set it up like this:
@ IN MX 5 mail.mydomain.com.
mail.mydomain.com. IN CNAME <your noip domain here>.
The points are important.
I translate into Russian:
mail.mydomain.com is declared as the mail server, then mail.mydomain.com is declared as a synonym for your dynamic domain..
The only problem is that it will not work normally for you. ISP dynamic ranges are 100% likely to be reported as spam sources on the nearest major mail server. Therefore, if you definitely decide to keep the mail server at your place, first of all, make a static address for yourself. If not, consider better pdd.yandex.ru or google apps for mail...

In MX, you write the address of the server that receives mail, or its domain. An example of a dns request to the yandex.ru domain:
[email protected] (Default):
yandex.ru. IN A 5.255.255.5
yandex.ru. 3328 IN MX 10 mx.yandex.ru.
We see that mail for the yandex.ru domain is received by the server with the mx.yandex.ru domain. And this server already has different IPs:
mx.yandex.ru. 599 IN AAAA 2a02:6b8::89
mx.yandex.ru. 3599 IN A 77.88.21.89
This IP will be the connection.
The mail server will follow the logic described by me when it looks for where to send letters for the yandex.ru domain.
If you do not have a dedicated IP - yes, you need to write the domain there.
