What is the software for monitoring the status (operability) of various systems?

You need a program or, perhaps, an online service where you can add a list of systems (it can be anything - servers, services, the current software build, some specific functions) and you can track whether they are in working condition or not. Tracking is either automatic (such as ping), or manually changed.
I don’t know what this type of program is called, and somehow I can’t google it.

That's what they call monitoring systems. By the amount of functionality and complexity of setup: freeping, munin, zabbix, nagios. If you need something more than ping, I recommend munin
