What size of indents ( Layout margins ) is set when
designing the interface for iOS ?

From 8 to 16, but not always. Depends on enabled flags :
If you rotate the device to landscape mode with the preservesSuperviewLayoutMargins flag enabled - they will be around 60 for frameless iPhones. For UITableViewController this works their boxes. Using Split, the indentation can also change.
All of the above applies to vertical indents, they are also not fixed.
Judging by the figma tag, you are interested in design. The indent from left to right must be set according to the content and elements that you use. For example, for a table on frameless iPhones, 16 + some more for cells is used ( depends on the type of table). If this is a collection, you need to look at how important it is to attach it to the edges.
