As far as I know, there is no such literature. It is assumed that those who are going to write their own OS have a good understanding of how hardware and existing operating systems work.
Apparently, for a start, you need to read Tanenbaum's "Modern Operating Systems", there you will get acquainted with how the OS is arranged.
Linus Torvals and Bill Gates also asked these questions on the toaster and ended up writing their own operating systems.
