What is the difference between Ubuntu Server and Desktop - in the absence of a graph. shells?

Interested in the difference between the Server and Desktop versions of Ubuntu.
Is the difference only in the graphical shell or is there something else?
I like Ubuntu as a system, but dash just kills me, so I thought if it was possible to take Ubuntu Server and put a graphical shell and drivers on the video card on it.
Or then I will have a problem with drivers for other devices - such as printers, flash drives, mp3 players and more?
Because it seems to me that in the server version a lot of firewood was removed there.

Put not ubuntu. Like the gnome - put Mint.

I just started learning Ubuntu and yes, the lack of it infuriates me too
