What is the best way to organize your own name servers?

VPS on DO - I host friends and several clients - all domains are connected via cloudflare. But I want to transfer some clients to my own name servers.
Not a tooth with a foot in this topic - how to organize your own server names with little blood?
NS1.MYSITE.COM, NS2.MYSITE.COM
If there are any cloud services - tell me. If you need to set up for vps, where to start?
