What is the best stack to use for IOT?

The situation is this, there are some devices with sensors (iot), 1 record can go every 10 minutes or when the trigger is triggered (for example, the light came on, but it shouldn’t) and at this moment it can start recording for about a couple of minutes (1 record / 20 milliseconds) approximately, and accordingly it sends this data with some frequency or as needed, i.e. (every 12h if everything is ok, or a request at the beginning of the state of emergency and at the end), that is, the recording frequency is not very large, I need to make a back for all this (I have a little experience in the back, since I was more involved in the front), and I can’t decide on the stack , so I want to use node c mongo for the time being (this is the first thing that came to mind, but it seems that it somehow doesn’t fit very well), or with some kind of tsbd, and I’m interested in hearing advice on this situation, who uses what or knows what fit better.

It doesn't really matter as long as you don't have thousands of devices sending data every second. The only thing you need to know at this stage is that you have 2 choices - rest or mqtt as the communication protocol
