What happens if you miss a project deadline?

I understand that the deadline must be met. But now upwork customers want you to plow like a slave and make websites in a week. I work full time, but it often happens that a person needs even more. I'm just starting and I don't know if it's worth taking orders when I'm not completely sure that you can make it on time. Tell me, is it worth hiding from the customer something that can be delayed for a couple of days? Share your cases of missed deadlines.
