What gives such a difference in approaches to addressing subdomains?
I noticed that Google has subdomains explicitly specified, while Yandex has them all at once. What gives Google / Yandex each approach?

I understand how to achieve what is different result , I'm interested in exactly why 2 big players use different approaches.

Google has always lived on the same domain, all services were on google.tld/something
At Yandex, individual services initially lived on something.yandex.tld, so something with typos could get into something. Therefore, we decided to catch such requests in one place and decide what it looks like there.
