What firmware is better to put on SGS2?

CM or MIUI or Stock. Each has its pros and cons.
For starters, try putting the Siyah kernel into the current firmware, it gives a significant performance boost without labor.

If the beginning is very stupid, then this does not mean that you need to change the firmware. It is better to make a backup of the data, then a full wipe and use a clean firmware - this is an easy way. Difficult is to change the firmware. We also make a backup of the data, then unlock the bootloader, install custom recovery and roll the firmware. I recommend CyanogenMod 10.

I won’t say about stock-based ones, because. I haven’t used them for a long time, and AOSP JB firmware (CM10 and MIUI builds based on it) are not very stable now, but quite usable.
If you want stability, it's better to look among ICS.
I used RGUI (MIUI), Kaffee4Eck (CM9, CM10) firmware, in principle there were no special problems. Now on cMIUI (JB) - sometimes FC sometimes the radio module is buggy. I'll have to try something else too.

CM10 if you are ready to update frequently, and wanamlite if you need a "stock", or SuperNexus
