What exactly does strip-size affect in a RAID array?

I would like with examples (well, there is “bigger size - better speed under conditions ...”).
Should I bother if I have RAID0 on my home machine, the controller is built into the chipset (nVidia nForce 520 LE).
It's just that when copying files, the speed starts at 200 mb / s and then drops and drops ... What am I doing wrong?
Hard drives (2 pieces) are as follows:
Western Digital 500GB 7200rpm 16MB WD5000AAKS 3.5 SATA II.

Small offtopic:

controller built into the chipset (nVidia nForce 520 LE).
This is the real fake-raid. Are you worried about your data?
IMHO, soft-raid is better than this. And then with such a little bit - you won’t get any problems.
