What do you do with old contracts when you increase your hourly rate?

It often happens that a customer hires for one project, and then, after completion under the same contract, continues to give a bunch of projects. It happens that customers disappear, and then after a couple of months they are announced with another new project. But my hourly rate by this time may already be different. What do you do in such cases? I had an unpleasant experience when I made 3 large projects under one contract with the same price, although I counted on one, and then I wrote to him that I plan to raise the rate from the next project (and not at all significantly), and he took it without warning and closed contract and put not 5 reviews, although everything was ok at work. Now the situation is the same with 3 more, I don’t even know how to get rid of them now, there are many other offers with better pay, I’m afraid to say something to them,

So close these contracts, and announce new prices when you open a new one. But in general, you got an inadequate customer.

Live with the paradigm and how the customer would like and how you would act and react to this on his part, and everything will immediately become clear to you, without any fortune-telling

I personally have not encountered. Somehow the old clients themselves gradually fall off and there is no problem, the note would have warned them much in advance. A few months in advance so they can plan their budget and work. This is the minimum respect.
