What do different chipsets give on motherboards?

Sorry in advance if the question is not on the site (I searched for the site rules, I didn’t find it), but still - what do different chipsets give on motherboards, on the basis I know that there are different processor power lines, but does this affect performance , after looking at a couple of tests on youtube, I still did not understand the difference in performance and processor temperature. Is it so important to overpay for a chipset if the choice is between B and X?
