What browsers on different platforms should be taken into account when building a site?

Usually a set of browsers is negotiated with the customer, but here I decided to stir up my own project. And I would like to cover as many potential visitors as possible. With win-browsers, everything is clear to me, but on other platforms it’s somehow not very good. An hour and a half run through the ratings gave only partial clarity, for example, on macOS. There is an invariable "four" - safari, chrome, opera, firefox. But a large number of other browsers still flash in different combinations. And it was not possible to find the prevalence of browsers in percentage terms (for macOS). I somehow don’t feel like testing on several dozen browsers, so I have this question: which browsers should be taken into account when making layout, and which ones can be scored? Interested in macOS, iOS, Andriod, Linux platforms.
