What are the ways to track the activity of linux server users?

There is a remote server (centOS), sometimes you need to see who did what, downloaded, deleted, etc.
I only know the history command. What other ways are there to track activity?

Description : The psacct package contains several utilities for monitoring process
: activities, including ac, lastcomm, accton and sa. The ac command
