RAID 0, 2 NVME and 1 SSD, how to set it up correctly?

Hello! I have 2 NVMEs and 1 SSD on the server. I would like to use 2 NVMEs for work and computing and 1 SSD for storage within a single server. That is, I do logging on two nvme, and transfer it to a regular SSD for storage.
What is the best way to implement this? Because in the hoster's panel, when choosing RAID 0, it says that one disk will not be used and can it really not be distributed anywhere, or does it greatly slow down the main RAID 0?

Ask this question to the hoster, perhaps it is precisely such hardware that does not allow it.
