Digital Tutors . You should start with Getting Started or with Maya Learning Paths, and then look by category to see what you would like to delve into. Superficially, of course, it is better to study everything at once: modeling, texturing, animation, etc., and then dig in a certain direction. In any case, the lessons on the resource are of high quality and new ones are added periodically.
In addition, there are usually not enough lessons, so you need to practice a lot here. A good way is to come up with something that you would like to embody in 3D and slowly implement it, based on the knowledge gained. I used T-shirt for a long time and my knowledge is outdated, but nevertheless.
The most laborious is Sergey Tsyptsyn's book "Understanding Maya". Old, huge, boring - it's the best for understanding how Maika works inside. Sergey posted it for free access on the ScreamSchool website, it was a hundred years ago and all the links died, but the book has spread over the net, finding it is not a problem.
