What architecture do you use in your mobile applications? As I understand it, the most preferred option is MVVM?

There is no silver bullet, and the architecture will depend only on the specifics of the project, the technologies used, and the experience of the team.
From what I can see - yes, very often the application ends up with something similar to MVVM / MVU / Flux, or even a combination of different approaches
