Video surveillance with sound?

We have a computer with Linux on board, a stream with video and sound. The task is to record with sound what is happening. I found a way to do it through motion, but it's rather clumsy.

If you need to record constantly, then mencoder or ffmpeg is enough for your eyes. If you need to react to what is happening, then I join the council'a.
