I can not find a player with a clear indication that you can change the quality of the video. Like, for example, it's done on YouTube. Do they exist at all?

When I wrote my player, I also encountered this issue, unfortunately YouTube no longer allows you to change the quality through the API.
If you play your videos, then you can do this.
If you need 2 options, then you can use: afterglowplayer.com
or https://plyr.io/ you can set several quality options, but there was (maybe already solved) a problem with YouTube.

Almost all players can change the quality, see VideoJS or PlayerJS
