Is the use of Knob Control appropriate in terms of convenience (usability) in this context and in general? If not, which element is better (I know one alternative - slider)?

A twister (if I understand correctly what we are talking about) will be more convenient than a slider only if the range of values ​​​​is large, and the installation accuracy is important. It will just be more compact, and you won't have to make big mouse movements.
In any case, it is necessary to make a text field under control for manually entering the desired value.

You may need an idea as an addition to the existing one:
Near the chart window there are scales (..-1 0 1...) so you can handle clicking and moving the mouse over them.
Imagine you clicked on the unit of the scale and "pulled" up to the end - the range of the chart will become from -1 to 1, and if it is back, it will be correspondingly larger.
As a result, it is very convenient to scale when demonstrating - less "jumps" of attention from the spinners to the chart, greater accuracy and visibility.
