Updating nginx without stopping it?

Good afternoon, there is an infrastructure of 2 proxy servers with nginx, are you interested in the possibility of updating nginx without stopping it?
There are alternative solutions, but I would like to know a question or a direction in the right direction on this matter.

or update - do you mean updating the version of the application (although it is there ....)?

1. You raise two new servers, put a new nginix
on them 2. You switch dns, load balancers or whatever you have
3. You kill old servers

service nginx restart - is this a deadly situation? well, you will be unavailable for a couple of seconds ...
yum update
apt-get update
apt-get upgrade
service nginx restart
and even that, the latter is not necessary - it will be restarted during the upgrade
